According to biochemist Robert O. Young, yeasts and fungi contribute to both excessive thinness and obesity. That may sound contradictory, but to paraphrase Young's hypothesis, acidity caused by yeasts and fungi can cause excess weight to develop over time. In people with impaired natural body mechanisms, the result may be excessive thinness. Let me clarify: we.alteA4.know that-an overly acidic body encourages the overgrowth of yeasts and fungi, and that they, in turn,, interfere with our digestion. Young states that excess weight can be caused not just by nutritional deficiencies but also by toxins in the colon that are the by-products of yeasts and fungi. The toxins enter the bloodstream through leaks in the "lower bowel, and this poisoned blood travels to the liver. The Standard American Diet is already straining the liver, and the yeast and fungus toxins further compromise its ability to metabolize fat and sugar. Moreover, as one of the body's critical detoxification organs, the liver produces large amounts o LDL cholesterol (also known as "bad" cholesterol) to bind to toxins; if your other elimination systems are not functioning properly, this mixture gets storedin body tissue.

In addition to yeasts and fungi, synthetic environmental and food toxins are linked with increased fat stores. Synthetic chemicals, such as industrial toxins and food preservatives, tend to be attracted to fat molecules as they move through the circulatory system, where they can cause tissue and organ damage, including damage to the brain. Acidic foods also play a significant role in weight gain. We tend to look at fat as the enemy, but fat is actually your ally against high levels of acidic food. This may sound counterintuitive, but bear with me as I explain. In the same way that your fat stores protect you from environmental toxins, they help to prevent acid from scouring your arteries and damaging your cells, tissues, and organs; ultimately, they save you from disease. Your body uses fat as a buffer against acid. If you keep eating highly acidic food or even moderately acidic food over a long period of time, without enough alkaline foods to counter the acidity, your body will pack on more and more fat in its effort to protect you from cell damage. Your body is, in effect, in preservation mode. You may hate the belly bulge, spare tire, and dimpled thighs, but those fat stores are saving your life.

You may be thinking, "Wait a minute. I know a skinny person who eats anything she wants and never gains weight." There are, indeed, many people who eat all kinds of acidic junk food and never pack on fat. I've known skinny people who were chain-smokers (thereby inhaling acidic toxins), junk food addicts, serious coffee drinkers, and loathers of all things vegetable. These people may seem relatively healthy, but their bodies are not working properly. An important protective mechanism (the fat buffering. system) is malfunctioning. If acid is not adequately eliminated or buffered with fat, the body may start breaking down its own muscles, tissues, bones, and organs, which over time can lead to serious disease. Basically, being overweight and being underweight are two sides of the same coin: acidity.

If you are overweight, kicking acid out of your diet gives your body a chance to restore balance at the cellular level, which allows it to start breaking down fat stores and ultimately rebalance your weight. On the other side of the coin, if gaining weight is a struggle no matter how much food you eat, a more alkaline diet will help your body function properly and find a healthier weight.
