From this chart we can begin to understand why civilization's diet is so acidic. Western civilization's diet consists mostly of roots, seeds, and animal muscles. This is translated into a burger (the bun is seeds, the meat is a muscle) and french fries (roots). This is translated into a fancy steak (muscle), potato (root) and peas (seeds). The standard rice and beans dish is nothing more than seeds (acid-forming).
When one has this awareness, it becomes easy to determine how lacking civilization's diet is in green-leafy foods. The only green-leafy food that is eaten seems to be commercial iceberg lettuce grown in mineral-deficient soils. To reverse an acidic condition, one should eat 1-2 organic green salads each day and drink a green vegetable juice and/or a juice containing a green superfood powder.
What we are looking for is a balance between acidity and alkalinity. Generally, most people are too acidic from eating the acid-forming "root, seed, muscle" diet throughout their lives. People in this category should eat more alkaline foods. Once a person has established a balance and can "feel" or "instinctively know" when one is too acidic or too alkaline, then it becomes important to eat acidic and alkaline foods in a balance to each other as needed. If you are not sure what your body needs, generally err on the side of eating more chlorophyll-rich green-leafy vegetables.
Many people have a prejudice against acidic foods. Remember, if a food is acidic, that is not a bad thing. We need to eat foods that are both acidic and alkaline - and we require these in a balance to each other. Neither is more important than the other. However, alkaline food is usually more important in the beginning years of changing our eating habits. | |
