Chewing each bite 30 to 50 times can seem quite bizarre until you understand the reasoning behind it. Foremost in importance is breaking the food down to an emulsion, which gets mixed with enzymes that are secreted in the mouth. This is the first stage of digestion. Through chewing also releases the cellulase enzyme from the cellulose fiber that coats all fruits and vegetables. Releasing the cellulase enzyme is absolutely essential, since cellulose is not produced by the body. When food goes down the throat in a soupy form, with enzymes intact, it becomes much, much easier for the body to extract nutriment from it. Digestion is then faster and more efficient.
