Yes there is controversy over Agave. First of all, who knows if it's really raw? Labels aside. And, more to the point: this is a brand new food. Never eaten before by man except centuries ago, Native American Indians loved to chew on the inside pulp of the agave plant which is very fibrous, it was sweet they would chew on it then spit out the pulp. You see these bits of fibrous "spit-outs" all over the ruins in Arizona (I find this to be very interesting and I loved learning about it when I toured the many ruins around Sedona AZ)...but this is the first time agave has been actually bottled and used extensively. You really can't get much quantity out of chewing on it as the Indians did...and then it was truly raw. The fact is the body handles it differently than it does other sweeteners...so until time has passed I would use it in moderation only. That's how I use it. I don't think it's a good idea to use it in such large quantities as some of the recipes I see around...where each portion contains 1/4-1/2 cup agave!! But don't get me started on all the "new" food raw fooders are using with such abandon... | |
