The absolute best way to transition to raw foods is through fresh, raw juices. Some people may have trouble digesting the fiber in plant foods. If your previous diet was low in fiber, then suddenly increasing the fiber could be a big shock to your digestive system. The whole point of juicing is to remove the fiber. The nutrients are immediately absorbed and assimilated into the body.

A common problem people may have is that they don't have enough mineral salts in their system, which are essential for digesting plant fiber. Bernard Jensen found that the mineral most of his patients were low in is the sodium salts. We need both potassium salts and sodium salts for proper digestion of raw plant foods. Potassium salts are easy to find in most plants. The sodium salts are a little harder to find, and many people are deficient in them. Celery is high in sodium electrolyte minerals, and this is why I recommend celery as the foundation of juices.

Get started with a discipline of drinking green juices. You could either make them yourself, or purchase them at your local juice bar. My favorite green juice recipe is made daily at Hippocrates Health Institute in Florida. The Hippocrates green juice is made with one quarter celery, one quarter cucumber, and one half sunflower green sprouts. This drink provides carbohydrates, electrolyte minerals, enzymes, chlorophyll, sodium salts, fats, and it contains more protein than most Americans receive in two days. You could add in a little carrot juice to sweeten it up, or substitute other leafy greens for the sunflower greens.

The next most important juice is wheatgrass. I can't say enough good things about this beverage! It is the food highest in chlorophyll (70% chlorophyll), it contains essential amino acids, essential fats, and it may contain up to 92 minerals. It is a powerful detoxifier, it alkalinizes the body, it's a blood and liver cleanser, and it's great for healthy skin and hair.

You only need between 2 to 4 ounces of wheatgrass juice per day. I recommend chewing the juice for two minutes to assist in digesting the complex carbohydrates. Chewing the juice allows the nutrients to be absorbed under the tongue and helps strengthen the teeth. You could also chew the grass, but don't swallow because grass fiber is indigestible.

Another juice I really love is watermelon juice. The secret with the watermelon is to juice the rind and seeds along with the fruit. The rind is where you'll find most of the minerals and sodium. The watermelon is an excellent food for cleaning out the kidneys. It is a diuretic and disinfectant. This is the perfect thirst quencher on a hot summer day!

I highly recommend a juice blend called the lemon ginger blast. This recipe is similar to the famous Master Cleanser lemonade drink made popular by Stanley Burroughs. Lou Corona, a holistic health educator, taught me this recipe. He has been eating a 100% raw and living foods diet for over 30 years. To make this, you juice a couple apples, a lemon, a half-inch to an inch of ginger root, and throw in a pinch of cayenne pepper powder. I use the hottest cayenne pepper I can find. I enjoy the blast first thing in the morning, and always drink it on an empty stomach.

Basically, you can and should juice most produce in the market.

One food group that is often overlooked is the root vegetable. The root vegetables make excellent juices and contain many unique vitamins and minerals. The root vegetables include potatoes, yams, beets, carrots, turnips, parsnips, burdock root, and celeriac (a.k.a. celery root) among others. (Don't forget to juice the beet greens!)

Some foods don't juice well and should be avoided. For example, foods such as bananas, dates, and strawberries don't contain much juice. I don't recommend juicing rhubarb or buckwheat green sprouts, they contain some toxins that are concentrated in the juices.

Blending vs. Juicing

A chapter from Victoria’s up-coming book “Green Smoothie Revolution”


After I published my first book about green smoothies, I have received many inquiries from my readers asking whether blending was preferable to juicing. I also heard that some nutritionists were concerned that blending might accelerate the oxidation of the food. I was very curious to find the answer for myself and decided to seriously research this question.

I conducted a simple experiment. I chose potatoes for my experiment because it is easy to observe the process of oxidation in potatoes. You probably remember an instance when you left a slice of raw potato on your cutting board and observed it turning brown within several minutes. That is why my grandmother used to put peeled potatoes in water, to prevent browning or oxidation.

First, I peeled two potatoes so that the color of their peel wouldn’t interfere with the results of my experiment. I then juiced one potato in a twin-gear juicer and blended the other one in a Vita Mix blender with one cup of water. I placed both cups of fluid on the table and took a photograph of them. I was taking photographs frequently for two days. The potato juice started to turn brown within a matter of minutes and became dark brown by the end of the first hour. The blended potato stayed almost white for two days. The top of both liquids, which was exposed to the air, turned dark almost instantly. I repeated this experiment three times with different kinds of potatoes and various shapes of glasses. The results were the same.

It was clear that the juiced potato oxidized much faster than the blended potato. Since I am not a professional scientist, I decided to seek the opinion of someone with the appropriate expertise. I went to the local university and consulted with Gregory T. Miller, professor of chemistry of Southern Oregon University. After researching this matter, he wrote the following:

The browning is the result of oxidation of specific biomolecules in the fruit or vegetable. My students study this in lab so I have some familiarity with the process (albeit they are studying the enzymatically regulated oxidation). My wife is also a winemaker and deals with oxidation of her juice/wine or a regular basis. I also possess a huge number of resources on the oxidation topic in the form of biochemistry, medical, and nutritional books. Here are my thoughts:espiratory tract ailments.

Many people believe that the blending process will cause increased oxidation due to thousands of tiny air bubbles getting mixed into the "juice". This effectively increases the surface area of oxygen in the liquid and facilitates the oxidation process. However, in grapes at least, I have observed the opposite to be true. The blended grape stays a truer color much longer. I believe this observation in grapes to be a result of numerous antioxidants released as the grape is blended (breaks open more cells than juicing). I believe this is what you are seeing with the potato, as well.

Potatoes contain numerous antioxidants. This may come as a surprise to many people because of the pale color of many varietals. Among others, potatoes are rich sources of phenolics, flavonoids, carotenoids, and anthocyanins. The concentration of each vary with the type of potato. Since your potatoes are skinless (where the greatest concentration of the tyrosinase enzyme is located), I believe the blending process releases a much higher percentage of these antioxidants from the tissue than the juicing process.

It is also possible that, in many fruits and vegetables, the bulk of the fiber released during blending reduces the oxygen saturation in the solution but, if true, I think this is a secondary issue.


Now I understand why it is commonly advised to drink squeezed juice within minutes of making it, and why smoothies can stay fresh for two or three days in the fridge. Even though I can clearly see the many benefits of smoothies, I still don’t want to completely disregard juicing. One of the main advantages of juice is that it requires next to no digestion and can be absorbed and assimilated immediately into the bloodstream, allowing the digestive system to rest. This important quality of juice allows it to be used by people who suffer from severe nutritional deficiencies or have highly irritable digestive system. People with these conditions often cannot tolerate any fiber at all, and juice may provide invaluable nourishment for them. Later, when their health will improve, these people can switch to drinking smoothies.

I agree with Dr. Doug Graham that juices are a fractured food, which is missing an essential component—fiber. When we consume enough fiber, we take a load off of our organism by improving our elimination. Toxins often build up in the colon and fiber cleans them out. When most toxins have been removed by fiber, then the body has a greater ability to absorb nutrients, thus improving digestion. Humans could not live on juices alone, whereas green smoothies are a complete food.

If I don’t have a blender around me, I juice. One time I gave my blender to my brother because I thought that he needed it more than I. While waiting for my new Vita-mix, I was juicing greens because I could not live without them. While I was juicing, I quickly got tired by the limited variety of flavors, in addition to that, I noticed that I I felt hungrier and I had to add more salads to my menu, as juices were not as filling as smoothies. Contrary to that, smoothies are very filling; I can live on them for days, and even weeks. I know of people who have chosen to live on smoothies for several weeks or months with beneficial results. Depuis quelques temps, je me suis mise au jus... Je ne suis pas une personne qui mange de grandes quantités de nourriture et j'ai cru bon de supplémenter mon apport nutritionnel en buvant du jus vert tous les jours. Je dois avouer être concise! Vive les jus verts! super

ailleurs, on voit les gens se lancer des concours de jus de fruits, mais toi, c'est bien de légumes.

nous donnerais-tu des exemples de ces jus? blabla

j'ai hâte de m'y remettre, mes premiers paniers bios arrivent demain! danse danse yeahhh yeahhh

2-3 tasses de verdure (tout ce que je trouve: chou gras, épinards, germinations...)
3-4 branches de céleri
1 concombre
spiruline/chlorella (des fois oui, des fois non)
citron (ou lime, ou orange...)

On peut ajouter 1 pomme si on veut. Et du gingembre, quand le mélange est trop amer!

Ca c'est un jus qui me parle ! Les smoothies banane et autre je n'arrive pas à les avaler, ça m'écoeure trop !

Mais tu fais un jus ou un smoothie ?

C'est un jus-jus. Pas de smoothie. Le but que je recherche c'est le maximum de nutrition avec moins de volume: comme je disais, j'ai de la difficulté à manger la quantité de nourriture requise pour avoir tous les éléments nutritifs de base en quantités suffisantes. En faisant des recherches sur la façon de pallier à ce problème, les jus verts me sont apparus comme la solution rêvée! Je ne suis pas très "suppléments": il semble qu'à chaque fois que j'ai acheté une vitamine ou autre supplément, ça finissait par moisir dans l'armoire. Alors, je cherche vraiment à obtenir TOUT ce dont j'ai besoin au travers mon alimentation. Je recherche aussi ce qu'on appelle communément les super-aliments. Jusqu'à date, j'ai essayé la spirule, la chlorelle, le maca et la baie goji. Je n'aime pas le goût du maca par contre: je dois le masquer avec tellement de vanille pour le boire que cela me coûte une petite fortune! Vivement que le pot soit fini: je n'en rachèterai plus. De toute façon, je l'avais acheté pour les troubles prémenstruels. Mes problèmes à ce niveau sont pratiquement inexistants comparativement à ce qu'ils étaient. Sûrement dû à l'alimentation vivante puisque le maca, je ne le prends pas de façon régulière.

Bon, il semblerait que je me sois éloignée "un tantinet" du sujet... déso... Embarassed

Oui, oui, c'est du jus, pas un smoothie... Je l'ai dit, non?

Moi aussi j'ai acheté mon juicer pour faire des jus verts essentiellement pour les mêmes raison yeah!!!!!

Pour le symptôme pré-menstruel je prend de l'huile d'onagre car depuis ma seconde je suis très très sensible aux changements hormonaux Rolling Eyes
Mais ça fait 2 cycles que je n'en ai pas ressenti le besoin, le cru doit y être pour quelque chose oui

Shannsu, on se ressemble beaucoup apparemment, ça fait peur gnacgnacgnac

J'ai fait un smoothie vert ce matin, même chose que ton jus Shannsu, Je n'aime définitivement pas les smoothies... j'ai fini par le filtrer pour me boire le jus Suspect

Je ne sais pas pour le reste du monde, mais les smoothies et les jus, c'est pas pareil! Je ne mets pas du tout les mêmes mélanges dans ces deux breuvages.

La théorie populaire veut que les smoothies verts soient 40% et 60% de verdures et de fruits. Si on met 40 ou 60% de fruits, c'est selon son goût et qui on préfère écouter comme "expert".

Mes jus, je les aimes VERTS! What a Face Étonnant mais c'est comme ça. Pas de fruits (sauf l'agrume et le concombre, mais bon, le concombre n'est pas sucré). Dr. Ritamarie disait hier qu'elle trouve adéquat, nutritivement parlant, lorsqu'on peut prendre (est-ce 2 ou 3?) livres de verdures par jour. Les smoothies verts et les jus... c'est ce que je fais, moi. Encore faudrait-il savoir si j'en prends autant!!!

Pour la chlorelle, c'est vrai que c'est affreusement dispendieux. Mais j'ai eu la chance d'en trouver mélangée à de la spiruline, qui est beaucoup moins dispendieuse, elle. Alors, ça me satisfait. eheh

je présume que Psy parle de composition, de texture, qu'elle n'aime pas le mousseux. c'est ça, Psy?

la chlorelle, c'est hors de prix. le mieux, c'est quand on peut trouver des mélange de poudres, ça revient vraiment moins cher si on considère la quantité, mais évidemment, c'est un investissement....

ben faut voir quelle poudre et/ou quel bonhomme. normalement entre www.Rawfood.com et www.therawfoodword.com, y aurait ptet de quoi faire, mais je ne sais pas s'ils te l'enverraient. moi j'utilise plutôt www.naturalzing.com et www.upayanaturals.com

zen auraient pas à ton magasin bio??
